Vanilla Cheescake Slice with Chocolate Sauce and Raspberries

This is another recipe from the wonderful ABC, Delicious cook book! This was soooo YUM!
The bottom layer is a chocolate biscuit base, the second layer is made from a creamy vanilla cheesecake mixture and the top thin layer is a sour cream and sugar topping. It was so delish! Then you top it off with some amazing homemade chocolate sauce and rasperries! It is one of those desserts that you just make again and again!


Line your tin.

Put biscuits and butter in a food processor.

Blend until a crumbly texture

Press the mixture into the bottom of the tin then bake in the oven for 20 mins

Meanwhile make thing vanilla cheesecake filling 
Take tin out of oven and evenly spread the second layer on top of the biscuits

Lick the bowl clean :) and place tin back in oven for 1 hour and 15 mins

Now make the cream cheese topping with cream cheese and sugar in a food processor

Place back in the oven for 15 more mins

To make the chocolate sauce, roughly chop __g of good quality dark chocolate (70% cocoa solids)

In a saucepan bring cream, butter and brown sugar to the boil

Add in the chocolate

Mix until fully combined

Heres the best chocolate sauce ever! Use on desserts such as cakes, icecreams and puddings. 

Take the cheescake out of the oven making sure it is firm but still a bit wobbly  
Cool in fridge for 3 hours-overnight then slice into rectangular pieces

Serve with the chocolate sauce, raspberries and some mint leaves

This is what it is meant to look like, pretty good effort :) I LOVE THIS CHEESECAKE!

Spicy Harissa Chicken with Spoon Salad

Also from my wonderful new cook book, I give you Spicy Harissa Chicken with Spoon Salad! :)
FIrst you must make the harissa paste, which i got from Ian Thorpes cook book, Cook For Your Life. It is a delicious spicy paste that lasts up to 6 months in your fridge!
Grab some dried red chillies and dehydrate them in boiling water for 30 mins. 
Drain the chillies. 
Mix up some spices 
Add the spices, chillie, garlic, more spices and salt into a processor.
This creates the wonderful Harissa paste!
Now marinate your chicken breasts and cool in the fridge while you prepare the spoon salad. 
Firstly chargrill the capsicums
Set them aside to cool on a plate. 
Score the tomatoes with a cross on each end... 
Then place in boiling water for 30 seconds.
Transfer the tomatoes to a bowl of ice cold water.
Chop up your capsicum and tomatoes plus some red onions, cucumber, parsley and mint. Also add another teaspoon of Harissa paste and some chopped chillies. 
Mix all together and drizzle some red wine vinegar on top. Then place in a sieve to remove excess liquid. 
Put it all together and serve with pita bread, couscous and yoghurt! 

Now dish it up, eat and ENJOY!

Moroccan Pasta

Yesterday, I received a new cookbook, ABC Delicious, More Please from my friend Grace.
The recipes look spectacular and I began with my first dinner of Moroccan Pasta. It turned out great and the whole family loved it. Definitely and keeper and one to use again. :)
Prepared all my ingredients :)

And this was the final result!
It turned out great, just like the picture in the book. The hint of lemon added a fantastic kick

Beginning My Blog

This is my first post for my new blog, Madlenka's Kitchen. Here I will post about new recipes I have tried out, disasters in the kitchen and masterpieces I have created. I am a 16 yr old girl, who has had a sudden interest and love for cooking. With most of my christmas presents being food and cooking related, I have lots of new equipment to work with and try new things with. As this has only recently became a hobby for me, I plan on taking pictures and recording meals I cook to view my progress and to look back on how I started.
